Breakfast

I woke up at 6 AM this morning for no reason at all because I did not have class until 12:30 PM today. I put the coffee on and tried to figure out what to make for breakfast. Usually when Dan is over I'll make some type of egg, which are not my favorite food by far. In the pantry I found an old box of pancake mix.

I love pancakes, because it is so easy to tweak the recipe, and make something completely different. I started combining the pancake mix and the cup of water (I prefer making pancakes from scratch) and then I saw bananas on the counter. 

I cut one up and fried it, then threw the caramelized bananas into the batter. (If you do this at home be careful if you have eggs in the pancake batter, let the banana's cool first or the batter will start cooking in the bowl.) Then I added a dash of nutmeg and cinnamon and about a cap full of vanilla extract. Once the griddle is heated up I just cooked some pancakes (or flapjacks as Dan calls them) and presto! Banana bread pancakes. They taste just like banana bread.


I went to wake Dan up with a cup of coffee and then I had a great idea. I started another batch of pancakes.  This time I substituted the water with some left over coffee. I made the mistake of adding it while it was still hot so the batter started to cook in the bowl. >_< After tasting the batter, it was very bitter, so I had to add about a handful of sugar and a cap full of vanilla extract. I cooked a few more pancakes with this batter.

We found out the banana bread pancakes are good when topped with maple syrup but if you make the coffee pancakes just top them with butter and a sprinkle of sugar. Needless to say breakfast was amazing. Sorry I did not take any pictures along the way, it was too early to remember the camera.
